HOW TO PREPARE THE MOROCCAN BEEF

 TAGINE WITH VEGETABLES

FYI:

·    *  You can replace the beef meat with any other meat (lamb or chicken).

·    *  You can even cook this tagine with only the spices for the marinade and vegetables. In this case, the cooking timing will be shortened (from 30 minutes to 45 minutes).

·    *  For the vegetables, you can add any kind of veggie you like

·    * Cooking in a ceramic or clay tagine should be in a low to medium heat to avoid damaging the recipient.

 


INGREDIENTS


·     * A tagine or any other cooking recipient, casserole or cooking  pan             

·    *  1 teaspoon of turmeric

·    *  ½ teaspoon of ginger powder

·    * ½ teaspoon of  peeper powder

·    * 1 bit of saffron

·    * 1 teaspoon and a half of salt

·    * 2 large teaspoons of parsley and coriander, chopped (leave half of it for decoration)

·    * 3 pieces clove of garlic, minced, crushed or put whole (as per your liking)

·    * 6 large teaspoons of water

·    *  1 Kg of beef meat (can be replace by either chicken or lamb)

·    *  6 large teaspoons of olive oil or any vegan oil

·    * 1 big onion, minced

·    * 1 big tomato, minced

·    *  2 carrots, cut in long shaped batonet

·    * 1 courgette or zucchini, cut as a batonet shape

·    * 200 g of green bean

·    * 200 g of green peas

·    * 2 pieces of potato, cut in four

·    *  A cup and a half of water (enough to cover the vegetables and meat)

 

METHOD OF PREPARATION

·     * In an empty large bowel, put the turmeric, the ginger, the pepper, the saffron, the salt, the chopped coriander and parsley, the garlic, and the 6 spoons of water.

·     *  Mix all ingredients

·     * Marinate the beef pieces one by one and leave it in the bowel a while enough to absorb the marinade sauce

·     * Put the tagine on the stove

·     * Turn on the heat, very low temperature

·     *  Add the 6 teaspoons of olive oil

·     * Display the marinated meat inside the tagine

·     * Add the sliced onion above the meat

·     * let those ingredients to simmer for about 10 minutes

·     * Occasionally check if the liquid level is ok to avoid any burning

·     * Add the vegetables (tomato, the carrots, the zucchini, the potato, the green beans and the green peas, )

·     * Pour the cup and a half of water all over the tagine

·     * Put a spoon between the tagine and its lid to avoid any liquid flow out during the cooking process

·     * Cover the tagine and reduce the heat to a low temperature

·     * The cooking time goes from 1 hour to an hour and a half

·     * Occasionally, check the water level inside the tagine so as not to dry up and burn all ingredients.

 

 

PRESENTATION

 

·     * Once our tagine is cooked, leave it to cool a bit.

·     * Pour two teaspoon of olive oil for more flavor (optionally)

·     * Decorate with what's left of the coriander and parsley
