RAS EL HANOUT
“THE MAGIC OF THE SPICE BLEND”
Ras El
Hanout is an
Arabic dialect word that literally means “Head of the grocery shop”. Its origin
comes from the north African countries, especially Morocco, Algeria, Tunisia
and Mauritania. It is the combination of the three food categories: spices,
dried herbs, and seeds. It can contain up to 100 ingredients. All the varieties
of spices, herbs, and seeds are grinded altogether to obtain a magical powder.
This blend is a phytoestrogen bomb that is highly rich in antioxidants, phytochemicals, flavonoids, and some other nutrients like
minerals, dietary fiber and essential oils.
This “odd” but unique and magical powder was used in the
past in rural areas both for its culinary and medicinal benefits.
The powder is not consumed directly. It is too powerful and
can cause some complications. It is best used like a
seasoning that can be added to all kinds of meals like tagines,
salads, soups, juices, hot drinks...

· Mace contains high concentration of iron and
calcium.
· Black
pepper, cardamom and coriander are rich in essential oils like piperine, pinene
and oleic acid.

· Cardamom is

SEEDS: sesame, caraway, fenugreek, coriander ….
SPICES: cumin, cayenne, cinnamon, turmeric,
cardamom, cloves, star anise, ginger,
DRIED HERBS: bay leaves, fennel, rosemary, thyme, sage, basil
leaves, marjoram….
· You can use
from 20g to 50 g of each ingredient
· You can add as
many ingredients as possible to the list above.
· You could take
away certain ingredients if you have
certain allergies or doubts.
· All ingredients
are crushed altogether in a blender for
grinding spices.
